For the masa: the masa will require 4 cups masa harina, one cup halal beef tallow or oil, one teaspoon baking powder and salt, and finally mixed with 1 ⅓ cups warm halal beef broth.

Extra: 30 dried corn husks. A large pot for steaming. String or strips for tying, optional.

Step 1 Prepare a brisket for the Halal meal

Spice and rub the brisket up with salt, pepper, garlic, paprika, and cumin then let it sit for 30 minutes. Once it has been allowed to sit, pour it inside the pot of hot oil where it must brown on both sides. Add the stocks and then pan-cook, covered at low and slow.

In an oven: cook at 300°F. Or on the stovetop: cook on low. Cook for 3-4 hours.

Until it is shredded easily with a fork, cool a little. Shred it into bits. Mix it up with a little sauce or broth in order to keep it juicy.

Step 2 Soak the Corn Husks

Preparing the husks must take place while the brisket cooks. Soak in warm water for 30-60 minutes or until soft and flexible. Drain and pat dry.

Step 3: Handling the Masa Dough

Take a big jug, add all the masa harina in it and blend with salt and cream of tartar until even. Add warm broth. Incorporate the beef tallow or oil.

Knead the dough until it is soft and smooth. It should feel like really soft play clay. Not dry. Not sticky.  Test: Put a small piece in water. If it floats, that means it is ready. If it does not float, keep mixing and kneading.

Step 4: Wrap the Tamales

Take one of the soaked corn husks. In the middle, place 2-3 tablespoons of masa dough. Spread it into a very thin layer. Leave edge space. On top of the masa, place the shredded brisket, about 1-2 tablespoons. The sauce is optional.

Start folding the sides of the husk in. Then fold the bottom up. If needed, tie it.  Repeat this with the remaining husks. It should yield about 25-30 tamales.
