As a native Texan, I have grown up fascinated with hunting and grilling meats. We spent our weekends at our lease in South Texas, tending the lands and preparing for the hunt. The best part of the hunt was standing around the grill and enjoying freshly cooked and perfectly seasoned meats. These memories have stuck with me throughout my life, and fueled my passion for preparing high quality smoked Texas BBQ.
As I grew older and started my family, I realized it was tough to find the time to get out and smoke meats for parties I was hosting. This was an issue for me, since there isn’t anything better than “fresh off the fire” smoked Texas BBQ to serve at one of your gatherings. I have tried other methods, such as in-person catering and take-out, but soon realized that with in-person catering cost quickly added up, and the flavor and moisture were never there with take out. My solution to this issue was to smoke meat overnight and systematically chill it in a vacuum sealed bag, ready to be reheated and served with maximum flavor and freshness. This allowed me to serve “fresh off the fire” Texas BBQ in a flexible, timely manner.
I wanted to share a taste of Texas BBQ with everyone in the country, and that’s how Truboy BBQ was born!!!
